Getting reservations here is a nightmare.
Shannon pulled them anyway because that is what a BFFL does.
Bar Chimera sits inside 550 Madison Avenue, the same building as Cote and Sushi Yoshitake, and if you have spent any time at either of those restaurants, you already know what you are walking into. This hospitality group does not miss. The branding is everywhere, the staff is almost mechanical in the best possible way, and the whole operation runs like someone actually thought about every single detail before opening the doors.
The Space
Brand new facility and it shows.
Three separate bars, each with its own focus. Whiskey. Wine. Martinis. You already know which one I parked myself at.
The centerpiece of the whole room is a living evergreen tree growing up through the middle of the restaurant. It sounds like a design gimmick until you see it in person and realize it is genuinely one of the cooler things happening in any dining room in the city right now. The whole space feels sexy without trying too hard, which is harder to pull off than it sounds.
If you need a reservation and cannot get one, try walking in at the bar. No guarantees but worth the shot.



The Martinis
Three martinis between two people before noon is a lifestyle choice I stand behind fully.
I started with the Potocki, a small batch double-distilled unfiltered Polish rye martini. Smooth is underselling it. This was one of the cleaner, more refined martinis I have had in a while. No sharp edges anywhere. Just a really well-made drink that reminded me why the martini is the only cocktail worth arguing about.
My second was the Haku, crafted from Japanese white rice and filtered through bamboo charcoal. Completely different profile from the Potocki but equally impressive. Lighter, a little softer, and dangerously easy to keep going.
Shannon ordered the Paradise, which she loved. Shannon is not normally a martini person. The fact that she loved it should tell you everything you need to know about the cocktail program here.
The Staff
Almost mechanical but still human, which is exactly how you want a restaurant like this to operate.
You can get honest opinions out of them. Ask what to order and they will actually tell you instead of deflecting with “everything is great.” The whole team is polished, professional, and genuinely on point from the moment you walk in to the moment you leave.



Bar Chimera $95 Prefix
For $95 per person you get a multi-course meal that moves at a pace that does not make you feel rushed or stuffed beyond function.
The standouts from the first courses were the SPRING PEA LETTUCE CUP, which were served ice cold and had a pop to them that woke everything up, and the GILDAS and Crispy Octopus, both of which were clean, well-executed, and the kind of dishes that remind you this kitchen knows exactly what it is doing.
The Mains: Steak and Burger
We went one of each and split both.
The Cote Imperial Wagyu steak frites comes with tallow fries and green peppercorn sauce with a $12 supplement. Slightly smaller portion than you might expect but the right size. You are not overly stuffed heading into dessert, which is the point. The steak had a great sear, cut beautifully into three pieces, and the fries were exceptional.
Here is the thing about the green peppercorn sauce. I did not put it on the steak because the steak did not need it. But on the fries? Absolutely unhinged level of good. I need to talk to someone about that sauce situation because I am still thinking about it.
The 550 Burger is a USDA Prime blend on a brioche bun with peppercorn mustard and tallow fries. Old school construction done at a very high level. The detail that stood out was the raw onion on the bottom, a thin slice, just enough sweetness to cut through the fat without overwhelming anything else. That is the kind of small decision that separates a great burger from a good one. Big fan. Genuinely one of the better burgers I have had this year.



Dessert
We finished with the CROQUEMBOUCHE CREAM PUFF and the chocolate cake.
The chocolate cake was solid. The cream puffs were the move. Light, delicate, and exactly the kind of dessert that brings you back to being a kid when your parents put out those little cream puffs at parties. Same energy, much better execution.



Final Verdict
Bar Chimera is exactly what you expect from this hospitality group, which means it is excellent across the board.
The space is gorgeous, the martini program is serious, the burger deserves the hype, and the green peppercorn sauce on the fries is something I will be thinking about for longer than I care to admit.
The only downside is getting a reservation. It is a nightmare. Start planning now.
